A MATCHA MOMENT is always a good idea 🍵

Since about a month back, I’ve tried to cut coffee after lunch, especially the days when I’m working from home, and I have to say that I’m not missing that extra cup of coffee. However, I’m still a coffee person in the morning ☕️ but the afternoon matcha latte serves me really well. It’s both a meditative thing to prepare and gives me sustained energy and comfort throughout the day 🤗

I use ceremonial matcha from @mondaymatchaclub and I absolutely love the taste of it (*gifted) 💚

LIBA PIZZA ✨ This pizza is absolutely delicious

LIBA PIZZA ✨

This pizza is absolutely delicious and so quick and simple to make. It could literally work as a quick weekday meal but it’s also absolutely perfect for that weekend meal. Or why not as a great appetizer to share? So many opportunities!

Healthy yet full of flavors ☺️

INGREDIENTS (1 pizza)
- 1 liba bread (I use wholewheat)
- 2 tbsp cream fraiche
- 200 g mushrooms
- Parmesan (as much as you like 😉)
- Handful of kale
- 1-2 garlic cloves
- Splash of lemon and a little bit of zest
- Sea salt, black pepper and chili flakes

HOW TO:
1. Saute chopped mushrooms in a frying pan. Add garlic, lemon and spices.
2. Spread an even layer of crème fraiche on the liba bread.
3. Add mushrooms to the pizza and top with shredded parmesan.
4. Bake in the oven for about 10 min on 250 degrees.
5. Massage the kale with some olive oil and top the pizza with this once ready from the oven.
6. Enjoy 💚

PEANUT BUTTER CUPS 🥜🍫

Kombinationen av crunch, salt och choklad är rena himmelriket enligt mig och dessa peanut butter cups är bara sååå goda! Jag har länge älskat Reese’s peanut butter cups, men jag lovar att dessa är minst lika goda, om inte godare - testa och se 😋

Dessa är perfekta att ha redo när sötsuget faller in. Spara genast så att du enkelt hittar när sötsuget faller in ✨

INGREDIENSER (cirka 5-6 stycken)
Botten:
- 5 rågknäcken (typ Finn crisp)
- 1 msk kokosolja
- 1 msk kakao
Mellanlager:
- 3-4 msk jordnötssmör
- Nypa havssalt
Topplager:
- 60-70 g mörk choklad

GÖR SÅ HÄR:
Mixa alla ingredienser till botten till en jämn smet. Tryck ut i muffinsformar. Toppa med jordnötssmör, flingsalt och ett lager av smält choklad. Ställ in i frysen i cirka en timme - NJUT!!

SUNDAY MEAL PREP ✨

Spending some extra time in the kitchen on Sundays is like meditation to me. And an extra bonus is that it helps me to get ready for the week - who doesn’t love that? 😍

Today’s meal prep:
- Granola with gingerbread spices
- Chickpea cookies 🍪 (these are to die for!!)
- Root vegetables (both for tonight’s meal and later this week)
- Chia pudding
- Soaked buckwheat (so I can make raw buckwheat porridge😋)
