Weekly plantbased meal plan – Fall edition

I oftentimes hear from lots of people that it is a constant struggle to decide what to eat each day and I guess this is why subscriptions on weekly food deliveries have become so popular. I totally get this, and I sometimes feel the same myself, but what definitely helps me is to sit down once a week to set a meal plan for the coming week. Taking all decisions at once really saves me from this daily energy consuming question when inspiration is not there. To help get your inspiration flowing for the upcoming week, I thought I would share my meal plan for this coming week. Since we are in the midst of September I’m leaning into more warm food and those fall recipes that is hearty and filling, but I’m also still in the summer mode due to the lovely September weather we’ve had lately. In essence, it’s a mix of summer and fall!

In this plan, I decided to go all in on plantbased food. There is this true hype around protein at the moment, and protein is super important for all of us, but there are so many variations of plantbased food you can eat with lots of protein in them. I normally eat 70-80% vegetarian food, and I simply love experimenting with plantbased food cause there are so many things you can do. However, if you prefer meat, feel free to adjust the recipes, all of them could accommodate that too if you prefer. At the same time, I would encourage you to maybe try something new this week – you might find something you really like that you were not thinking you would, just saying 😉

MONDAY: Red lentil curry with rice.

TUESDAY: Harvest salad with quinoa and chickpeas.

WEDNESDAY: Greek butterbeans with sourdough bread.

THURSDAY: Carrot fritters, cold potato salad and pesto. Recipe from my dear friend and true inspiration @yogakoket.

FRIDAY: Halloumi fajita with black bean spread and avocado.

SATURDAY: Libapizza with mushrooms and kale. Recipe coming soon, but in the meantime you find a similar recipe here.

SUNDAY: Pasta with baked tomatoes and burrata from Sofia Wood’s cookbook ‘Darling Pasta’.
